Mac and Cheese Please!

Fly Boy is off on a camp with the Air Force cadets tomorrow.  He is supposed to spend the week gliding but sadly we are having really rainy weather and I am really afraid that he is going to spend the week grounded due to the weather.  Such a shame.  I couldn't tell him how wet it was going to be as he would be highly likely to decide he didn't want to go and he can't do that at the last minute.  So, to make me feel better about him going off to a soggy camp, I let him choose what we had for dinner tonight.  Mac and Cheese Please.  Hmmmm, packet stuff or real stuff?   At first he said packet stuff but then in a rare moment of wisdom he changed that to homemade stuff so I googled a recipe and put it together.  What a quickie!  I think I have found another easy to feed them favourite.
EASY MACARONI AND CHEESE


400g macaroni
1 ½ cups cream
¾ cup milk
1 ¼ cups grated tasty cheese
½ cup grated Parmesan
S&P to taste
1.3 cup bread crumbs
½ cup grated cheese to top
Ground paprika – I left this out

Grease a large baking dish.  Cook pasta as directed, drain and keep warm.  In the same saucepan place cream and milk over a medium heat.  Bring to boil, reduce the heat, then stir in the cheeses and add S&P to taste.

Stir over medium heat till cheese has melted, then return pasta to pan.  Toss to coat the pasta in the sauce then transfer to the baking dish.  Sprinkle with bread crumbs, extra cheese and paprika.  Place under hot grill till topping is golden and crunchy.

I won't eat it - too much cream and cheese for me but the boys loved it and given that they are both skinny rakes they can afford it.  I expect Fly Boy will have some for breakfast tomorrow.  

I did manage to get some sewing done today but nothing I can show you as I was finishing the backing and labels for two Christmas gift quilts.  One is layered and pinned and ready to quilt and the other is ready to be pinned.  I tried to do it today but my hands were too sore after pinning the first one.  

We have to be up at 4am tomorrow to be in the car at 5am to get him to the train station in time to connect with the other cadets going on the camp so it is off to bed for me soon.  

Lots of sewing tomorrow I hope - at least one quilt quilted that's for sure!

  1. Can you send your other son off to camp too? Glad to hear that you will be able to be back in your sewing room - that must feel great. I think I will have to try your recipe - maybe tomorrow night. I think my husband and son will really like it.

  2. Sound like a good recipe. I serve the children on Wednesday dinner at church. For the kids, same food every Wednesday, corn dogs, chicken nuggets and macaroni and cheese. You would be surprised at the number of adults who come to the children's line and say "just a little mac and cheese, please. It's so good." Hope Fly Boy has a sunny week end.
